The Bee's Knees is what we call a "classic" cocktail. It originated in the early 20th century, probably during Prohibition. Folks were distilling their own (not very good) gin—known as "bathtub" gin—and needed a way to mask its harshness. If something was "the bee's knees" it meant it was really cool. Don't ask me why, I agree that it's a weird phrase!
Adding lemon and honey syrup to the gin made it much more palatable, and a classic was born. Still, I recommend using a quality gin for this drink. Honey and lemon only get you so far.
2 oz. gin
3/4 oz. honey syrup
1/4 oz. fresh lemon juice
Combine all ingredients in a cocktail shaker or mixing glass. Fill shaker 3/4 full with ice and stir about 30 seconds to chill. Strain into couple glass and garnish will lavender or lemon peel.
To make honey syrup, combine equal parts honey and warm water. Stir until the honey dissolves. Let cool before using in a cocktail.
