This one is sort of like an Old-Fashioned, but with rum instead of bourbon. Callisto is a botanical white rum distilled in California. Botanicals are something more often found in gin, so I often use this one in places where I would usually use gin. But because it's rum, it also can substitute for whiskey. Very versatile!
ROSEMARY'S BABY
2 oz. Callisto rum
1 oz. St. George Bruto Americano
Demerara sugar cube
Charred cedar bitters
Place the sugar cube in the bottom of a rocks glass. Soak it with bitters and muddle it until it's sufficiently crushed. Add the rum and amaro and swirl to combine. Add one large ice cube and a sprig of fresh rosemary.
