Got leftover Champagne or sparkling wine from New Year's Eve? Well this is the perfect cocktail for you! It's basically a daiquiri but topped off with sparkling wine for a little extra je ne sais pas quoi.
OLD CUBAN
1 1/2 oz. light rum (I used Rolling Fork)
1 oz. simple syrup
3/4 oz. fresh lime juice
2 dashes Angostura bitters
6 mint leaves + 1 sprig for garnish
2 oz. Champagne or sparkling wine
Place the mint leaves in the bottom of a cocktail shaker with the simple syrup and lime juice. Gently muddle them to release the mint's fragrance (but don't muddle too hard or too long or the mint will turn bitter). Add rum and bitters and fill the shaker 3/4 full with ice. Shake 25 seconds, then double-strain into a chilled coupe. Top with Champagne or sparkling wine and garnish with a sprig of fresh mint.
To make simple syrup, heat 1 cup water until just barely boiling. Remove from heat and stir in 1 cup granulated sugar until sugar dissolves. Allow to cool, then store in a glass bottle in the refrigerator for up to 1 month.
