Two of my favorite holiday flavors are cranberry and pomegranate. I love that we have fruits that come into season just in time for the end-of-year celebrations! One of my friends gave me a pomegranate from her yard (I live in California, where lots of people have pomegranate shrubs in their yards), so of course I knew I would make cocktails with it. The cranberry juice and pomegranate arils provide the tartness, and simple syrup makes it a little sweet. It reminded me of my favorite movie theater candy when I was a kid: SweeTarts.
SWEETART
1 1/2 oz. vodka (I used White Hjerte by Laurel Canyon Spirits)
3/4 oz. cranberry juice (be sure you're using pure juice, not "cranberry juice cocktail" or this will throw the drink out of balance)
1/2 - 3/4 oz. simple syrup (depending on how sweet you want the drink to be)
20 drops bitters of your choice (I used Bitters Lab Jamaica No. 1 blend)
1 tablespoon pomegranate arils
1 egg white
Combine all ingredients in a cocktail shaker. Add one large ice cube. Shake hard for 60-90 seconds (the longer you shake, the better your foam will be). Double-strain into a chilled coupe. Let the foam rise, then carefully place a few pomegranate arils on top for garnish.
