One of my brothers is very musical. He releases new songs via Bandcamp every now and then, and I wanted to create a cocktail as a companion piece to his latest release. I asked him for some info about the song, but all he told me was that it would be called Lunatics and that the cover art had a pineapple on it. So I set about putting something together.
Obviously I had to include pineapple juice. Rum is the most obvious spirit choice because rum is at the heart of all true tiki cocktails. But I wanted to do something unusual, the way a lunatic would. So I put together a bunch of flavors that I normally wouldn't, and it was delicious! It was also a lot easier than a lot of tiki cocktails. It's common for them to have 10-15 ingredients, half of which are juices. I don't have time for all those juices!
A LUNATIC'S COCKTAIL
2 oz. Hendrick's gin
1/2 oz. fresh pineapple juice
1/2 oz. allspice dram
1/2 oz. St. Germain Elderflower liqueur
Regatta Craft Mixers Ginger Beer
Combine all ingredients except the ginger beer in a cocktail shaker. Fill 3/4 full with ice and shake 12 seconds. Strain into a wine glass filled with ice and top with ginger beer. Garnish with pineapple fronds and a tiny umbrella.
